Spaghetti with clams and samphire


  4 servings:


- 300 g of spaghetti

- 500 g of clams

- 500 g of samphire

- 200 g of cherry tomatoes

- 1 clove of garlic

- 2 basil leaves

- salt

- extra-virgin olive oil

Clams are the most widely used shellfish in our cuisine, easy to cook, suited to all situations and, an aspect not to be underrated, very easy to digest.

In general, bivalve shellfish have similar nutritive properties. Clams have few calories but a lot of protein and are therefore perfect for those on low calorie diets. They are very rich in cobalamin (vitamin B12), indispensable for the formation of the blood and in the metabolism of proteins and fats. They also contain fair amounts of vitamin A, fundamental for the body’s development, along with iron, sodium, iodine, zinc, selenium and phosphorous, the structural element in bones and teeth, as well as B-group vitamins. Clams are an excellent food for vegetarians, whose diet is lacking in these micronutrients. Care should be taken however of their high cholesterol content although, on the other hand, clams contain a large quantity of omega-3 fatty acids which help to lower blood cholesterol levels.

Clams, like all bivalve shellfish, filter sea water; they are therefore not to be recommended for those with high blood pressure, considering their sodium content. They must not be eaten during pregnancy or by nursing mothers, by people with allergies or intolerance or those affected by hyperthyroidism (again because of the excess of sodium). For everyone else, what could be better, especially now that summer’s here, than a bowl of spaghetti with clams accompanied by a glass of chilled white wine?
