Baccalà with spunzali (spring onions)

- 1 Kg of desalted stock fish

- 5 spunzali (spring onions)

- 8 winter cherry tomatoes

- extra virgin olive oil

- salt

For centuries considered as treatment for many diseases and used with therapeutic purposes, the onion is a low energetic nourishment but very rich in water, mineral salts, vitamins and flavonoids. It helps digestion and stimulates our metabolism thanks to its high content of enzymes. It has diuretic and depurative properties and is an excellent natural antibacterial and anti-inflammatory.

According to some research the daily consumption of onions helps to prevent heart diseases and to reduce blood pressure and cholesterol levels. Moreover, it has a high fluidizing power and facilitates blood circulation and is, therefore, very suitable for those who suffer from thrombosis.

According to a recent study published in the European Journal of Nutrition, a diet rich in onions can be a protection against acute myocardial infarction, that is it reduces the risk of a heart attack. Other studies show that the frequent consumption of onions also helps to increase bone density.

More research is being carried out on the antitumor properties of onions and the outcome of their use in diets for the prevention of cancer are very positive.

In addition, onions can be used as an expectorant and decongestant of the pharynx by mixing its juice with honey.

In a few words onions are a concentration of good qualities that should encourage us to use them regularly in our diet. They can be added raw, in small flakes, to salads, and thousands of tasty recipes include them, as for example delicious baccalà with spunzali.
